Nu Olde Ale

My first attempt at an Old Ale. There's honey in this, and some twists
of licorice, but no peated or smoked malt. Wanted an OG of 1075, but
underestedmated amount of malt, brewing 6 gals. E-mail me in a coupla
months to see how this turned out!

Type: All grain Size: 6 gallons
Color:
21 HCU (~12 SRM)
Bitterness: 53 IBU
OG: 1.060 FG: 1.018
Alcohol: 5.4% v/v (4.3% w/w)
Water: Good Oregon water, filtered with Brita.
Grain: 10.5 lb. American 2-row
3 lb. American Vienna
1 lb. Belgian aromatic
1 lb. Dextrine malt (Cara-Pils)
.3 lb. Belgian Special B
Mash: 59% efficiency
Hot infusion mash; around 155°.
Boil: 90 minutes SG 1.045 8 gallons
.5 lb. Honey
1 oz. Licorice Whips (3)
I'll ad a teaspoon or so of calcium carbonate to the boil to make
this seem more British. Always use a tablespoon of irish moss.
Hops: 2 oz. Kent Goldings (5.2% AA, 60 min.)
1 oz. Willamette (5% AA, 45 min.)
1 oz. Willamette (5% AA, 15 min.)
.5 oz. Ken Goldings (aroma)
Yeast: Wyeast 1335 British II ale yeast, in 10 oz. starter.
Log: This beer will be racked & bottled early, before it's totally fermented
out. I'll let it age in bottles for as long as I can stand.
Carbonation: corn sugar
