Alcohol: 12.9% v/v (10.2% w/w)
Water: Use bottled spring water
Grain: 2 lb. American 2-row
1 lb. American crystal 60L
8 oz. Flaked wheat
8 oz. Dextrine malt (Cara-Pils)
Mash: 50% efficiency
Mash grains @ 152°f for at least 30 minutes, Mash out @ 168°f . Sparge with 170°f water.
Boil: 90 minutes SG 1.128 5 gallons
13 lb. Light malt extract
2 lb. Amber dry malt extract
1/2 tsp Irish moss added at 60 minutes, 1/2 at 15 minutes.
Hops: 2 oz. Centennial (10.5% AA, 60 min.)
2 oz. Chinook (12% AA, 60 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Centennial (10.5% AA, 30 min.)
1 oz. Chinook (12% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Centennial (10.5% AA, 15 min.)
2 oz. Cascade (aroma)
Yeast: 4 pks Danstar Nottingham dry yeast (rehydrated)
Log: One week in the primary, Dry hop with 1oz Cascades in hop bag during a 2 week secondary ferment. The other 1oz of Cascades aroma hops is used in a hopback.
Carbonation: 1.8 volumes Dried Malt Extract: 3.76 oz. for 5 gallons @ 60°F
After bottling age in bottles for at least 6 months
