OG: 1.114 FG: 1.022
Alcohol: 11.9% v/v (9.3% w/w)
Water: Used filtered water, and added gypsum to the sparge water.
Grain: 12 lb. 8 oz. British pale
1 lb. British brown
2 lb. American crystal 20L
1 lb. American crystal 60L
1 lb. 8 oz. Dextrine malt (Cara-Pils)
Mash: 72% efficiency
1. Infusion mash at 155°F for 90 minutes. Collected 6 gallons of wort,
boiled down to 4.5 gallons
O.G. was 1.092
2. Collected a second running for a small beer. This I added 3 lbs. of
the malt extract.
Boil: 120 minutes SG 1.093 5.5 gallons
1 lb. Light malt extract
1. Boiled 30 before adding hops.
2. Added hops as noted.
3. Added 1 lbs. light maly extract at 45 minutes after doing a specific
gravity test that revealed a S.G. of 1.060
Hops: 1 oz. Centennial (10.5% AA, 90 min.)
1 oz. Centennial (10.5% AA, 45 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Willamette (5% AA, 15 min.)
Yeast: 1. made a 500 ml starter of White Labs Irish ale yeast.
