John Barley #5

This marks #5 in the annual barleywine brewing festival. Something of a Brittish persuasion this time a round that should serve as a great winter warmer.

Type: All grain Size: 5 gallons
Color:
58 HCU (~24 SRM)
Bitterness: 65 IBU
OG: 1.081 FG: 1.020
Alcohol: 7.9% v/v (6.2% w/w)
Water: 2 tsp. of gypsum added to wort before the boil.
Grain: 15 lb. British pale
1 lb. American Munich
8 oz. American victory
8 oz. American crystal 60L
12 oz. Dextrine malt (Cara-Pils)
8 oz. British Carastan
8 oz. American chocolate
Mash: 60% efficiency
Single temperatue infusion mash utilizing 1 qt. of water per pound. Average temperature for 90 minutes was only 145°, giving us a less than thorough conversion.
Boil: 95 minutes SG 1.060 6.75 gallons
Re-hydrated irish moss added 15 minutes before the end of the boil.
Hops: 3.5 oz. Fuggles (4% AA, 75 min.)
.5 oz. Fuggles (4% AA, 60 min.)
1 oz. Fuggles (4% AA, 30 min.)
.5 oz. Kent Goldings (5% AA, 10 min.)
.5 oz. Kent Goldings (aroma)
Yeast: Wyeast London #1028 started in a 750ml of hoppy wort.
Log: Brewed on July 18, 1998. The actual starting gravity was 1.077 due to the low temperature mash and lack of full conversion. Dryhopped for one month with 1/2 ounce plug of Kent Goldings.
Carbonation: Bottled with 1/2 cup corn sugar.
Tasting: At bottling this beer tasted very drinkable. Stronger than an olde ale but not quite typical barley wine strength. Try using 1.25 quarts of water per pound of grain if you a using a mashing system without the abillity to add heat and raise the temperature.
