AJ Brew #2 (Barleywine)

This is a VERY alcoholic brew. Lots of problems along the way, but it has turned out VERY nice.

Type: All grain Size: 10 gallons
Color:
25 HCU (~14 SRM)
Bitterness: 90 IBU
OG: 1.125 FG: 1.022
Alcohol: 13.3% v/v (10.4% w/w)
Water: 10 gallons filtered mash water with 4tsp. gypsum added. 15 gallons filtered sparge water, ph adjusted to 5.7 and 3tsp. gypsum added.
Grain: 30 lb. American 2-row
2 lb. American crystal 20L
5 lb. American Munich
1 lb. Flaked barley
Mash: 58% efficiency
Protien rest @ 128°f. Started raise after 5 minutes. Mashed @ 155°f. for 1 hour. Sparge for 1 hour collecting 14 gallons wort. 1 of the 4oz Nugget hops added to boiling pot at beginning of sparge for first wort hopping. Collected 7.5 gallons additional wort for a "small beer"
Boil: 60 minutes SG 1.089 14 gallons
8 lb. Light dry malt extract
2 lb. Amber dry malt extract
2tsp. Wyeast yeast nuitrient added to boil.
Hops: 1 oz. Cascade (6% AA, 60 min.)
1 oz. Centennial (10.5% AA, 60 min.)
4 oz. Nugget (12% AA, 60 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
2 oz. Cascade (6% AA, 5 min.)
1.2 oz. Cascade (aroma)
Yeast: 5 gallons on freshly racked 1056 (American ale)
5 gallons on 1/2 gallon starter 1275 (Thames valley ale)
Log: Brewed on 4/28/01 Fermented at 62°-72°f Fermentation stuck at 1.050, champagne yeast added, no effect. Amylase enzime added, fermentation started again.
Racked to secondary on 7/5/01 and dry hopped with 1oz Cascade & 1oz Centennial in each carboy.
