Uncle Petes English Pale Ale

Type: Extract w/grain Size: 5.25 gallons

14 HCU (~9 SRM)
Bitterness: 41 IBU
OG: 1.060 FG: 1.010
Alcohol: 6.4% v/v (5.0% w/w)
Water: House tap water for the boil. Artesian well water for everything else.
Grain: 2 lb. British pale
Steep: Placed the grains in the pot with 1 1/2 gallons cold water. Brought up to 104F for 20 minutes. Then to 122F for 10 minutes. Then to 140F for 10 minutes. Then 152F for 10 minutes. Then to 177F. Turned off flame and let rest for 10-15 minutes. Rinsed grains with 1/2 gallon 170F water in a different pot. Did it 2 or 3 times. Patience in this step is how I get the grain steep up to such a high effeciency.
Boil: 60 minutes SG 1.105 3 gallons
3 lb. Light malt extract
3 lb. Amber malt extract
1 lb. Light dry malt extract
Place your 1 1/2 gallons grain water and extracts into brew pot. Add water to make 3 gallons. Follow the hopping schedule.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 45 min.)
1 oz. Tettnanger (4.5% AA, 15 min.)
Yeast: I keep using a Safale 04 London dry yeast that I keep harvesting and saving from previous batches. I know it is dry and relatively inexpensive but it keeps working so well. I just store in the refrigerator in a sanitized plastic 16 oz beer bottle. I've done this several times with liquid yeasts also. Sure seems like a good way to knock down the cost of a $7 bottle of liquid. I've never had a bad batch of beer from doing this.
Carbonation: 5 ounces corn sugar in a bottling bucket.
