Brewed this as a sour Anchor Steam clone, the process done like Bells oarsman

Bitterness: 48 IBU
OG: 1.056 FG: 1.014
Alcohol: 5.4% v/v (4.3% w/w)
Water: 1 tsp gypsum mash water
Grain: 5 lb. 0 oz. American 2-row
5 lb. 0 oz. American 6-row
1 lb. 0 oz. Wheat malt
1 lb. 0 oz. American crystal 60L
Mash: 65% efficiency
154 deg rest / 90 mins/ 170 deg strike water/ 3.5 gallons
168 MO/ 10 mins/ 198 deg water/ 1.5 gals
collected 7 gallons- then put 2.5 gallons in open bucket w/ 1 cup wheat malt sprinkled on top, cover in saran wrap, let set in basement until you can't stand the smell (about 5 days). The other 4.5 gallons put into sterilized carboy and refridgerate
Boil: 60 minutes SG 1.043 6.5 gallons
Bring soured wort and refridged wort together in boilpot, finish out as usual. IM at 5 minutes.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Northern Brewer (8.5% AA, 30 min.)
.5 oz. Northern Brewer (aroma)
Yeast: Wyeast 2112 Cali Lager
Log: Ferment at 72 degrees 7 days. Transfer onto gelatin, lager at 40 degrees 1 month. Bottle w/ corn sugar, let set at least another 6 monthes.
Carbonation: 2.4 volumes Corn Sugar: 4.01 oz. for 5 gallons @ 65°F
