Landlord clone

Simple recipe with a 90 minute boil to create some caramel flavors. Based on a famed UK bitter.

Brewer: Matt B Email: -
Beer: Landlord clone Style: English Best (Special) Bitter
Type: All grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 29 IBU
OG: 1.043 FG: 1.010
Alcohol: 4.3% v/v (3.4% w/w)
Water: None- dechlorination only.
Grain: 8 lb. 8 oz. British pale
8 oz. British crystal 70-80L
Mash: 70% efficiency
I use all maris otter for the base malt. Mash at 152 double batch sparge with 7 gallons total runoff. Should be right about 1.038 at start of boil.
Boil: 90 minutes SG 1.034 7 gallons
to get a good caramel note I boil the original 7 gallons vigourously for 30 minutes, take a gravity reading and adjust with spring water to get back to my starting gravity of 1.038. Then I will bring back to a boil and boil for 60 minutes a little less vigorously. Whirlfloc and yeast nutrient added at 15 minutes.
Hops: 1.5 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Any english ale yeast will work but I like Yorkshire Bitter yeast from Wyeast. Ferment at 67F, not too cold, you want some esters in this beer.
Carbonation: carbonate on the low end at 1.75 to 2.0 volumes of CO2
