Alcohol: 4.1% v/v (3.2% w/w)
Water: city water, 1 tbsp gypsum added
Grain: 16 lb. 0 oz. American 6-row
1 lb. 0 oz. American victory
1 lb. 0 oz. Flaked corn
Mash: 72% efficiency
148°rest/5 gallons water@170°/75 minutes
168°rest/2 gallons water@180°/15 minutes
MO 178°/6+ gallons water@200°/2 hours
Boil: 90 minutes SG 1.037 12.5 gallons
IM at 10 minutes
Hops: 2.25 oz. Centennial (9.1% AA, 60 min.)
2 oz. Cascade (7.8% AA, 30 min.)
2 oz. Liberty (4.3% AA, 15 min.)
Yeast: Repitch from batch 101 and 102
Log: actual preboil 1.044
actual sg 1.052
conical fermentation starting at 70° and slowly lower to 62° for 2 weeks total.
Carbonation: 2.6 volumes Keg: 13.4 psi @ 40°F
force carb at 20 psi for few days, then serve at 13 psi
Tasting: going to be hoppier than the style calls for, but just looking for some good old summer swilling brew!
Added 1oz french pressed cascade pellets to the keg...just wasn't hoppy enough!
