Alcohol: 11.5% v/v (9.0% w/w)
Grain: 0.40kg Belgian chocolate
0.40kg Roasted barley
136g Dextrine malt (Cara-Pils)
Steep: Steep grains at 155°F for 25 minutes. Add extract when temperature reaches 185°F
Boil: 30 minutes SG 1.099 8 gallons
1.8kg Molasses
7.65kg Light malt extract
Add extract when temperature reaches 185°F and sustain a rolling boil for 2-3 minutes. Add 150 grams of Lactose (non-Fermentable)with last hop addtition.
Hops: 24g Tettnanger (4.5% AA, 60 min.)
24g Spalt (6.75% AA, 45 min.)
14g Spalt (6.75% AA, 30 min.)
14g Tettnanger (4.5% AA, 30 min.)
28g Willamette (5% AA, 20 min.)
Yeast: Safale US-05: A ready-to-pitch dry American ale yeast. Safale US-05 produces well balanced beers with low diacetyl and a very clean, crisp end palate. Sedimentation: low to medium. Final gravity: up to 12%

Carbonation: 1.9 volumes Cane Sugar: 26.3g for 2 gallons @ 60°F
1-1/2 tsp of granular sugar per 22 oz bottles.
