Dog Daze - Summer Saison

17 HCU (~11 SRM)
Bitterness: 27 IBU
OG: 1.072 FG: 1.010
Alcohol: 8.1% v/v (6.3% w/w)
Water: Tapwater with 1 TBS 5.2 Stabilizer and 1 tsp gypsum added to mash.
Grain: 10 lb. Belgian Pilsner
1 lb. 4 oz. German Munich
8 oz. Belgian CaraVienne
2 oz. Flaked wheat
8 oz. Torrefied wheat
6 oz. Belgian Special B
4 oz. Flaked oats
Mash: 80% efficiency
145°F for 60 minutes. Pull a 1 gallon decoction and add to 1 gallon boiling water. Reintroduce to mash for mash out of about 160°F. Sparge with 175°F water to reach 7 gallons in brewpot.
Boil: 60 minutes SG 1.057 7.0 gallons
10 oz. Corn sugar
Hops: .5 oz. Kent Goldings (6.1% AA, 60 min.)
.5 oz. Tradition (5.8% AA, 60 min.)
.5 oz. Tradition (5.8% AA, 30 min.)
.5 oz. Kent Goldings (aroma)
.5 oz. Tradition (aroma)
Yeast: White Labs 565 in a 1 quart starter.
Log: Brewed July 4th 2011

Primary 10-14 days at 73°F.
Secondary 20 days at 73°F.

Carbonation: Keg and force carbonate.
