summer saison

my first crack at a saison, love the style but have never brewed one.

Type: All grain Size: 6 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 33 IBU
OG: 1.069 FG: 1.010
Alcohol: 7.7% v/v (6.0% w/w)
Water: 1:1 tap, di water. 1tsp of gypsum added to the mash
Grain: 5 lb. American 2-row
5 lb. Belgian Pilsner
3 lb. Belgian Munich
1 lb. Belgian aromatic
1 lb. American crystal 10L
Mash: 75% efficiency
mashing low for that dry, attenuated saison taste. 143 for one hour
Boil: 90 minutes SG 1.042 10 gallons
whirlfloc at 15 mins
Hops: .5 oz. Hallertauer Hersbrucker (5% AA, 60 min.)
.5 oz. Spalt (6.75% AA, 60 min.)
1 oz. Saaz (3.75% AA, 30 min.)
1 oz. Saaz (3.75% AA, 15 min.)
Yeast: cant remember the numbers, but white labs saison in a 2 litre starter
Log: starting at 70 then ramping up to 80, I understand this yeast can be termpermental.
