Quinoa Sorghum India Pale Ale

This is an initial shot at a real Gluten-Free homebrew.

Type: Extract w/grain Size: 3.0 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 63 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Water: Hard Tap Water (temporary hardness)
Grain: 8 oz. Roasted Quinoa
Boil: 60 minutes SG 1.043 3.5 gallons
3 lb. White Sorghum extract
12 oz. Brown sugar
4 oz. Malto-Dexterin
Kept the whole Quinoa in the boil, strained with the hops @ transfer.
Hops: .5 oz. Centennial (9.2% AA, 60 min.)
1 oz. Cascade (5% AA, 15 min.)
.5 oz. Centennial (9.2% AA, 15 min.)
1 oz. Cascade (5% AA, 5 min.)
1 oz. Cascade (aroma)
0 oz. Centennial (aroma)
Yeast: US-05 Dry (if doing gluten free, beware of non-gluten-free liquid yeasts).
Log: I have 1oz of Hungarian Oak Cubes that may get added after primary fermentation has blown off and let that age for a week or two.
Tasting: TBD. It will be "beer."
