Herman's Rochefort 8 Clone

Thank you Herman Holtrop for the wonderful Rochefort 8 clone recipe. I finally had to try it. This is as good as it gets.

Type: All grain Size: 5.2 gallons
Color:
85 HCU (~31 SRM)
Bitterness: 25 IBU
OG: 1.081 FG: 1.010
Alcohol: 9.1% v/v (7.2% w/w)
Water: I have Munich-like water
Grain: 8 lb. 8 oz. Belgian Pilsner
1 lb. 4 oz. Belgian CaraMunich
8 oz. Belgian Special B
2 oz. Carafa special II
8 oz. Flaked corn
Mash: 80% efficiency
148F for 90 min.
Boil: 75 minutes SG 1.066 6.4 gallons
1 lb. 8 oz. Belgian dark syrup
1 lb. Cane sugar
Added invert sugar at end of primary ferment at day 7, so actual boil gravity is 1.055 and OG is 1.066
IM at 15
Hops: 1 oz. Styrian Goldings (5.2% AA, 60 min.)
1 oz. Hallertauer (4.6% AA, 30 min.)
0.7 oz. coriander (5 min.)
0.5 oz. Hallertauer (aroma)
Yeast: WY1762
Log: 18 days primary - 65F for the first 3 days then let it go. 28 days secondary.
Carbonation: Bottled at 3 volumes and kegged at med-high (as high as I can get it).
Tasting: Tremendous plum, fig, currants from malt plus lighter fruits from yeast with cloves and a little peppery note as well but not overpowering in Belgian character. Alcohol blends well and attenuation was big so that the slightly sweet finish is balanced and urges you to take another sip. Was hot for about 2 months after bottling, but now has mellowed perfectly. Fantastic brew!
