Tradewinds Mango Pale Ale

Oh to be Mango!!! Why to be me??

Beer: Tradewinds Mango Pale Ale Style: American Pale Ale
Type: Extract w/grain Size: 5.0 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 24 IBU
OG: 1.052 FG: 1.010
Alcohol: 5.4% v/v (4.2% w/w)
Water: Tap water with 1 tsp gypsum.
Grain: 4 oz. American crystal 40L
Steep: Place crushed grains in muslin bag and add to 1 gallon room temperature water with gypsum. Heat water to 150F and allow to steep for 15 miutes, drain into brewpot. Rinse grainbag with 1 gallon 170F water to extract all sugar/flavor from the grain. This should make for 2 gallons in brewpot.
Boil: 60 minutes SG 1.129 2 gallons
4 lb. Light dry malt extract
2 lb. Wheat extract
Add light and wheat DME to brewpot and bring to a boil. Once mixture begins to boil, remove from heat and add 2 oz Cascade hops. Return to heat and boil 60 minutes. Add .75 oz Cascade finishing hops and 1 tsp rehydrated Irish Moss last 15 minutes.

Strain wort into fermenter and top off to about 5 gallons with cool water(remember you are adding fruit and fruit juice to the keg so leave room for it).
Hops: 1.75 oz. Cascade (6% AA, 60 min.)
.75 oz. Cascade (6% AA, 15 min.)
Yeast: LIQUID YEAST: White Labs 001 or Wyeast 1056 in a 1 qt starter.

DRY YEAST: Safale US-05 pitched directly to wort.
Log: Primary fermentation at 65°F for 7-10 days or yeast until activity ceases. 14 days in secondary at 65°F.

Peel and cube 2 large VERY RIPE mangos, place in muslin bag and place directly in keg along with 1 quart organic mango juice.


Carbonation: Force carbonate to 2.5 volumes.
Tasting: An extract conversion of the original all grain recipe... Should be just as good. Cheers!
