Bitterness: 17 IBU
OG: 1.046 FG: 1.014
Alcohol: 4.1% v/v (3.2% w/w)
Water: 1 tsp gypsum and 1 TBS 5.2 stabilizer to tapwater.
Grain: 5 lb. American 2-row
2 lb. 5 oz. Wheat malt
8 oz. American crystal 40L
4 oz. Dextrine malt (Cara-Pils)
8 oz. Flaked wheat
2 lb. Rice Hulls (for lautering help)
Mash: 80% efficiency
156F for 60 min with 1.3 qt/lb. 1 qt decoction. Sparge with 175-180F to collect 7.5 gallons.
Boil: 60 minutes SG 1.034 7.5 gallons
Hops: .5 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Cascade (aroma)
.5 oz. Centennial (aroma)
Yeast: White Labs 051 in 1 qt starter
Log: place two split vanilla beans in a few ounces of vodka on brew day. Add vodka an beans to keg on kegging day.
