New Ginger Ale I'm getting ready to try

14 HCU (~9 SRM)
Bitterness: 21 IBU
OG: 1.053 FG: 1.013
Alcohol: 5.1% v/v (4.0% w/w)
Water: Have soft water in my house it has worked so far so I'm sticking with that
Grain: 4 oz. Dextrine malt (Cara-Pils)
4 oz. American crystal 40L
Steep: 30 min @ 165 degrees
Boil: 60 minutes SG 1.053 2 gallons
12.8 oz. Light dry malt extract
12.8 oz. Honey
12.8 oz. Amber malt extract
12.8 oz Light dry extract at 60 min
.5 oz Cascade at 60 min
12.8 Honey at 60 min
12.8 oz Pale LME at 30 min
1/2 lemons juiced at 30 min
6 oz Ginger shredded at 30 min

1/4 tsp Irish Moss (rehydrated for 24 hr) at 15 min
.4 oz Ginger shredded at 10 min
1/2 Lemons zest at 10 min
.5 oz Williamette at 2 min
Hops: .5 oz. Cascade (5.5% AA, 60 min.)
.5 oz. Willamette (aroma)
Yeast: WLP060 White Labs American Ale Yeast
