OG: 1.050 FG: 1.016
Alcohol: 4.4% v/v (3.4% w/w)
Grain: 7.05 lb. Belgian Pilsner
1.10 lb. German Munich
1.37 lb. Dextrine malt (Cara-Pils)
4.4 oz. Acid Malt
Mash: 70% efficiency
Dough in with 3.13 gal. 70°F water for 15 min
Add 2.17 gal of water at 165.6°F water to raise temp to 105°F (acid rest) and rest for 20 min. (pH=5.3)
1st decotion: Remove 1/3 thick part and boil for for 10 min., return to mash (mix) to raise temp to 122°F (protein rest)and rest for 10 min.
2nd decoction: Remove 1/3 or more of thick part and boil for 10 min., return to mash (mix) and add boiling water to raise
mash temp to 155°F (conversion rest) and rest for 20 min.
3rd decoction: Boil thin part (liquid) for 5 minutes and return
to mash raising temp to 170°F (mash out)
Sparge with 3.75 gal. 168°F water
Boil: minutes SG 1.036 7 gallons
3.2 oz. Corn sugar
1/2 tsp. Irish moss at last 15 minutes of the boil
Hops: 0.45 oz. Perle (7.6% AA, 60 min.)
0.45 oz. Galena (13% AA, 20 min.)
0.90 oz. Saaz (3.75% AA, 20 min.)
1 oz. Saaz (aroma)
Yeast: Pilsen Lager (Wyeast Labs #2007)
Log: pitch yeast at 68°F for 24 hours, then move to refridgerator and ferment at 45°F for 28 days.
(I use a Blichmann conical fermentor, so there is no need to rack to a secondary)
Carbonation: 2.4 volumes Corn Sugar: 3.78 oz. for 5 gallons @ 60°F
