Type: All grain Size: 24.75 gallons
Color:
20 HCU (~12 SRM)
Bitterness: 44 IBU
OG: 1.053 FG: 1.012
Alcohol: 5.3% v/v (4.2% w/w)
Water: Not quite glacier melt....
Grain: 13.5 lb. British pale (MO)
16.5 lb. German Pilsner
13.5 lb. German Munich
4 lb. Belgian CaraMunich
7 oz. Carafa II
Mash: 75% efficiency
Ahem, step mash:
142F for 16 minutes
152.5 for 60 minutes.
VERY full mash-tun (had to smooth the surface to allow the lid to fit)
Very thick mash.
Fly sparge.
Later gyle yielded 4 gal of 4.5P wort - used for top-up.
Boil: 72 minutes SG 1.049 27 gallons
Forgot to add the Whirlfloc/Irish Moss for clarity
Hops: 1.75 oz. GR Tradition (7.1% AA, 60 min.)
1 oz. Spalter Select (5.6% AA, 60 min.)
1.4 oz. Columbus (14.8% AA, 60 min.)
3 oz. Spalter Select (5.6% AA, 40 min.)
2 oz. Spalter Select (5.6% AA, 30 min.)
.5 oz. Spalter Select (5.6% AA, 5 min.)
1 oz. Spalter Select (aroma)
Yeast: WLP 029 and 036, 2 vessels each.
5th fermenter has a blend of both.
