Bitterness: 61 IBU
OG: 1.052 FG: 1.015
Alcohol: 4.8% v/v (3.8% w/w)
Water: All water is RO
Grain: 19 lb. Gambrinus 2-row
.5 lb. Weyermann Light Wheat malt
2.5 lb. Castle Belgian Munich
.5 lb. Breiss crystal 40L
1 lb. Weyermann Melanoidin malt
Mash: 72% efficiency
Mashed in w/ 162°F hot liquor to rest at 152°F for 1 hour. Check sacrification w/iodine. Mash out w/ 175°F hot liquor to collect 14 gal.
Boil: 60 minutes SG 1.045 14 gallons
Add 1 tablespoon Irish Moss at last 15 min. of boil.
Hops: 2 oz. Northern Brewer (whole) (8.1% AA, 60 min.)
3 oz. Cascade (plugs) (6.1% AA, 45 min.)
1 oz. Cascade (plugs) (6.1% AA, 30 min.)
1 oz. Cascade (plugs) (6.1% AA, 15 min.)
Yeast: Oak Creek Brewing house yeast slurry.
Carbonation: Carbonate in corney keg.
