A wonderful weizenbock brewed on my daughter's confirmation day in celebration.

37 HCU (~18 SRM)
Bitterness: 19 IBU
OG: 1.072 FG: 1.018
Alcohol: 7.0% v/v (5.5% w/w)
Water: Munich-type water
Grain: 4 lb. German Pilsner
6 lb. Wheat malt
1 lb. 4 oz. German Munich
4 oz. American chocolate
4 oz. Belgian aromatic
4 oz. Belgian Special B
Mash: 77% efficiency
145F for 25 min, then 150F (a goof)
Boil: 75 minutes SG 1.060 5.8 gallons
Hops: 36g Hallertauer Hersbrucker (4.1% AA, 60 min.)
Yeast: WY3068 from hefe yeast cake
Log: 21 days primary @ 68-70F, 21 days secondary at room temp of 72-25F.
Carbonation: medium-high carbonation
Tasting: Dark amber-orange color with slight haze and billowing head. Clove stands out with banana, cherry and apple fruit notes more in background. Wheat is there but also has some plum type notes and chocolate/nutty quality stands out a lot more than would think. Much lighter mouthfeel due to low mash temp with some higher alcohol and a slight tartness in the finish, but makes it quite drinkable. Very nice.
