Angus IPA II

This is my first all grain brew. I am using the Northern Brewer two igloo cooler system for HLT and MT and Blickman boilermaker pot as brew kettle. I am racking to carboy through a Therminator chiller and inline thermometer. Racked at 70°F exactly!

Brewer: Doug Kraus Email: krausdoug@gmail.com
Beer: Angus IPA II Style: India Pale Ale
Type: All grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 60 IBU
OG: 1.063 FG: 1.013
Alcohol: 6.5% v/v (5.1% w/w)
Water: Put 4 gal in one cooler and 4.75 gal in the other to sit out overnight after heading them both up to around 140. No additions to the water.
Grain: 10 lb. American 2-row
8 oz. American crystal 10L
8 oz. Dextrine malt (Cara-Pils)
8 oz. Belgian CaraMunich
Mash: 75% efficiency
Heat 5 gal of water to 162°F for the mash. Used 4.25 gal. According to my other thermometer the mash was only at 140°F so I added about another 0.75 gal of boiling to bring it up. Still only got to about 145°F. Let sit for 60 minutes.
Heat 4.75 gal of water to 172°F for sparge. Heat 2 gal of water to 180°F and added for ten minutes for sacch rest. Then sparged to boil kettle.
Boil: 60 minutes SG 1.053 6 gallons
Irish moss added at 15 minutes.
Hops: 0.5 oz. Nugget (12.2% AA, 60 min.)
0.5 oz. Nugget (12.2% AA, 45 min.)
1 oz. Centennial (9.2% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: White Labs WLP001 California Ale Yeast.
Created a 600ml starter on Thurs night for Saturday morning brew.
HUGE, QUICK action in fermenting carboy! Still going strong at 1 week mark (68°F in dark closet).
Log: Brew date: 4/9/2011
First all grain brew. Based on OG of 1.040 at 65°F instead of 1.063. I obviously didn't get the mash efficiency I should have. Due to winding up with 7.25 gallons in brew kettle (boiled down to 6.24 - 6.5 gal)? Due to too low of sparge and mash?
