1.25 lb. Wheat malt
2.3 lb. American Munich
1.25 lb. Dextrine malt (Cara-Pils)
3.5 oz. American black patent
2.5 lb. Flaked rye
5 lb. Rye (raw)
Mash: 65% efficiency
Mash in 4.5gal of 160f strike water
mash 145f 10 min then ramp up to 152f for 50min
mash out at 170f
Boil: 90 minutes SG 1.063 11.5 gallons
7 lb. Light malt extract
3 lb. Light dry malt extract
Tsp Irish Moss
Hops: 1 oz. CZT (13% AA, 60 min.)
.5 oz. Centennial (10.5% AA, 60 min.)
1 oz. Centennial (10.5% AA, 30 min.)
3 oz. CZT (aroma)
Yeast: this recipe calls for 1272, I think we may try 5gal of Pacman and 5gal US-05
