Fig IPA

Found a monster fig tree in the apartment complex next to mine that nobody but the birds ever touches. Decided to pick a bucket full and see how they turned out in an ale.

Type: All grain Size: 5 gallons
Color:
52 HCU (~23 SRM)
Bitterness: 158 IBU
OG: 1.046 FG: 1.008
Alcohol: 4.9% v/v (3.8% w/w)
Water: Milwaukie, OR carbon filtered tap water.
Grain: 6 lb. 15 oz. American 2-row
4 lb. 9 oz. American victory
1 lb. 2 oz. American crystal 120L
Mash: 51% efficiency
used 5 gal cooler mash tun. 18qts of water per 12.5lbs of grains at 154 degrees for 60 mins.
Boil: 90 minutes SG 1.046 5 gallons
Irish Moss @15 mins
Hops: 2 oz. Chinook (13% AA, 60 min.)
2 oz. Willamette (7.5% AA, 30 min.)
1 oz. Chinook (13% AA, 15 min.)
Yeast: 1056 Ale yeast smack pack.
Log: In primary for seven days.

4.8 lbs fresh frozen figs added to secondary for seven days. Figs were frozen and vacuum sealed, then blanched for two minutes and quartered before adding.
Carbonation: 3/4 cup corn sugar boiled into 2 cups of water.
Tasting: tasted after two weeks in bottles and it was terrible. The skin of the figs gave it an awful woody flavor. Almost dumped the whole batch out but decided to give it two more weeks and see what happens. after those two weeks the woody taste was all but gone. maybe just a tiny hint of it in there but hardly noticable. Very enjoyable beer. I would skin the figs next time and it would be golden.
