Early Springa

Type: Partial mash Size: 5 gallons
Color:
19 HCU (~11 SRM)
Bitterness: 62 IBU
OG: 1.070 FG: 1.010
Alcohol: 7.8% v/v (6.1% w/w)
Water: NH well water, Iron mesh mineral filter, water softener, carbon filter
Grain: 5 lb. British pale
2.50 lb. American victory
1 lb. Dextrine malt (Cara-Pils)
Mash: 50% efficiency
3 Gal @ 157° for 60 minutes
strain 2.5 Gal to boil pot at full heat
transfer 3lbs to grain bag and steep until boil (20 minutes)
heat other .5 gal seperate pot to 200° and transfer to boil pot once grain bag is removed -
Boil: 60 minutes SG 1.117 3 gallons
2.50 lb. Light dry malt extract
2.00 lb. Honey
1 oz. Bitter Orange Peel
bring to boil - add dry extract and 1st hops - boil @ 212°

1 tbsp Irish moss @ 45
1 oz. Bitter Orange Peel @ 45
Hops: 0.50 oz. Cascade (6% AA, 60 min.)
1.00 oz. Chinook (12% AA, 60 min.)
0.50 oz. Amarillo (9.1% AA, 45 min.)
0.50 oz. Cascade (6% AA, 30 min.)
1.00 oz. Chinook (12% AA, 15 min.)
0.50 oz. Amarillo (9.1% AA, 15 min.)
Yeast: US-05 - no starter
Log: fermented @ 67° for 10 days, cold crashed and keg conditioned for 14 days
Carbonation: 30 psi for 48hrs, 3-5 psi thereafter
Tasting: Initially, holy honey!, after a couple weeks much more balanced, good malt balance, not too bitter but a little on the sweet side, complex and strong (flavor keeps going until the alcohol comes through). Next time a little less honey or earlier in the boil.
