Bitterness: 17 IBU
OG: 1.091 FG: 1.010
Alcohol: 10.4% v/v (8.2% w/w)
Grain: 0.75 lb. American crystal 10L
0.75 lb. Dextrine malt (Cara-Pils)
Steep: Steep for 35 minutes at 155°F
Boil: 60 minutes SG 1.227 2 gallons
5.00 lb. Light malt extract
3.5 lb. Wheat extract
4 lb. Maple syrup
Add extract when temperature reaches 185°F and sustain a rolling boil for 2-3 minutes.
Hops: 3 oz. Kent Goldings (5% AA, 60 min.)
2 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 10 min.)
Yeast: Trappist-High Gravity-3787
Log: Note: add maple syrup for last 5 minutes of the boil
Total Brew time: 2 hours and 30 minutes
**Very Agressive Fermentation**
Tasting: Just brewed will add tasting notes later 2/27/11
