Summertime Saison

As of yet unbrewed saison for summer 2011... my first Saison ever. Feel free to email me with notes. :)

Beer: Summertime Saison Style: Belgian Pale Ale
Type: All grain Size: 5.5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 29 IBU
OG: 1.047 FG: 1.005
Alcohol: 5.4% v/v (4.3% w/w)
Water: RO water, buffered with 5.2. Gypsum added to boil to increase perceived dryness and enhance hop bitterness.
Grain: 4 lb. American 2-row
3 lb. German Munich
1 lb. Flaked barley
Mash: 89% efficiency
Mash at 148*F for 75 minutes.
Boil: 60 minutes SG 1.035 7.5 gallons
Wirfloc tab at 15 minutes. Wyeast yeast nutrient at 10 minutes.
Hops: .5 oz. Styrian Goldings (5.5% AA, 60 min.)
2 oz. Saaz (3.75% AA, 20 min.)
1 oz. Saaz (3.75% AA, 0 min.)
Yeast: Not sure about this one... I'll probably go with either Wyeast's French Saison strain or WL's Saison blend. I've heard people have a lot of attenuation issues with WLP565. Then again, if you can tame 565, it produces an excellent beer (tried a wit fermented with 565 produced by a local microbrewery, and it was wonderful).
