Arrogant Matt-Nerd Ale

This is a slightly modified version of the recipe from thebrewingnetwork.com's "Can You Brew It?" show, scaled to my rig/efficiency. The brewers found that with an OG of 1.066, a grist of 10% Special B and the remainder 2-Row, and the following hop schedule, they produced a beer that was very similar to A.B. in a side-by-side tasting with the Stone product. Homebrewers have criticized the recipe as producing a too-light-colored ale without enough bitterness. I've upped the special B by 4% and increased all the hop additions by about 50%. Bitterness: 182 IBU
OG: 1.066 FG: 1.010
Alcohol: 7.2% v/v (5.6% w/w)
Water: RO water with gypsum/chalk added to balance pH at ~5.2.
Grain: 19.2 lb. American Pale
3.13 lb. Belgian Special B
Mash: 80% efficiency
150*F for 60 minutes. 10 minute mashout at 168*F.
Boil: 90 minutes SG 1.051 13.5 gallons
1 lb. Light dry malt extract
Wirfloc tab at 15 minutes. Wyeast yeast nutrient added at 15 minutes.
Hops: 2.5 oz. Chinook (13% AA, 90 min.)
2.5 oz. Chinook (13% AA, 45 min.)
2.5 oz. Chinook (13% AA, 15 min.)
2.5 oz. Chinook (13% AA, 0 min.)
Yeast: WLP007, 5.5 quart starter (OG 1.040) built up on stirplate.
Log: I missed my OG by about 6 points, so I made up for it with a pound of boiled DME split between the two carboys.
Carbonation: 2.3 volumes Keg: 12.5 psi @ 45°F
