Steep: steep grain for 50 minutes, add flaked wheat with 20 minutes remaining, then begin boil and add malt syrups
Boil: 50 minutes SG 1.072 3.5 gallons
5 lb. Light malt extract
.3 lb. Amber malt extract
1 lb. Wheat extract
Hops: .3 oz. Amarillo (9.5% AA, 45 min.)
.4 oz. Amarillo (9.5% AA, 30 min.)
.2 oz. Amarillo (9.5% AA, 15 min.)
.3 oz. Amarillo (aroma)
Yeast: Wyeast Kolsch liquid yeast
Log: Colder fermentation
Carbonation: 2.5 volumes Corn Sugar: 4.32 oz. for 5 gallons @ 66°F
