Prognosticator II

I plan to do parti-gyle. Using the first half of the runnings should get me around a 1.072 og which fits the style. The second half I'll use to make an oktoberfest, but will obviously have to add malt extract to that in order to bring the og up to around 1.052

Type: All grain Size: 7 gallons
Color:
47 HCU (~21 SRM)
Bitterness: 16 IBU
OG: 1.054 FG: 1.020
Alcohol: 4.4% v/v (3.5% w/w)
Water: I'll use charcoal filtered water.
Grain: 5 lb. German Pilsner
8 oz. Wheat malt
7 lb. German Munich
1 lb. American crystal 120L
4 oz. Belgian chocolate
Mash: 75% efficiency
Traditional three decoction mash vs modified two decoction mash.
Boil: 90 minutes SG 1.051 7.5 gallons
Hops: 2 oz. Hallertauer Hersbrucker (3% AA, 90 min.)
Yeast: wyeast activator 2487. will activate and allow some growth @ 55 before pitching into wort.
Log: Primary at 55. Diacetyl rest at 60 for 2days. Secondary at 34 for 7-8 wks. Lager in bottles.
