This is a clone of Sierra Nevada's Celebration Ale, brewed for my entry to our homebrew club (Howard County Homebrewers)competition in March.

Bitterness: 86 IBU
OG: 1.076 FG: 1.010
Alcohol: 8.5% v/v (6.7% w/w)
Water: City water
Grain: 14 lb. 0 oz. American 2-row
2 lb. 0 oz. American crystal 60L
Mash: 65% efficiency
Dough in at 112° for 15 minutes / 125° water / 1 gallon
Rest at 152° for 2 hours / 175° water / 3.5 gallons
Mash out 168° for 15 minutes / 170° water / 1 gallon
Batch sparge 60 minutes 2.5 gallons 170° water
Boil: 60 minutes SG 1.054 7 gallons
Irish moss @ 10 minutes
Hops: 1 oz. Chinook (12.9% AA, 60 min.)
1.6 oz. Cascade (7.8% AA, 15 min.)
1 oz. Centennial (9.1% AA, 15 min.)
1.25 oz. Cascade (aroma)
.75 oz. Centennial (aroma)
Yeast: 1 pack Safale-05, rehydrated in 1 qt. cooled wort 30 minutes
Log: Will use gelatin at xfer. French pressing 1 oz. cascades and .5 oz. centennial hops at transfer.
Sg 1.064 Pre-boil SG 1.054
Ferment @ 65° for 7 days, rack for 7 more days.
Carbonation: bottle - 5 oz. corn sugar boiled in 1 qt water for primer.
