3rd attempt at at a mouthwatering red. F.G. is higher than expected was expecting a FG of 1.012. will try a 800ml starter next attempt, rather than a smack pak . Also will up the carared to a full pound to impart a bit more color. Any comments are welcome.

8 oz. german carared 17l
Steep: all grain into steeping bags , flame on bring temp slowly up to 122°
f , steep 30 min, up temp to 154° f , steep 30 min, remove grain bags and placed into colonder to sparge with 170° f water
Boil: 60 minutes SG 1.048 6.5 gallons
8 lb. Light malt extract
amarillo p hops 8.5aa 60 min
1/2 tsp irish moss 45min
williamette p hops 4.5aa flameout
Hops: 1 oz. Amarillo (8.5% AA, 60 min.)
1 oz. Willamette (aroma)
Yeast: 1056 american ale (wyeast)

Carbonation: 1.6 volumes Keg: 8.1 psi @ 55°F
Initial force carb @25 psi for 24 hrs, rocking keg every few hours for 2-3 min.
