4 oz. Belgian Special B
4 oz. American black patent
4 oz. Roasted barley
4 oz. British chocolate
Steep: Specialty grains will go in a hop bag (or two) as soon as the burner is lit and removed when the water comes to a boil.
Boil: 45 minutes SG 1.146 2.5 gallons
7 lb. Amber malt extract
2 lb. Cane sugar
The first hop addition will also be added when the burner is lit and left in the wort for the remainder of the boil. The time to bring the water up to boil with the grains in the water should not be included in boil time.
Hops: 1 oz. Zues (13.5% AA, 40 min.)

1 oz. Zues (13.5% AA, 20 min.)
1 oz. Chinook (14.1% AA, 20 min.)
2 oz. Northern Brewer (9.9% AA, 7 min.)
Yeast: Using 5th or 6th generation Scottish Ale yeast, mainly because of the cold temps in my cellar. 1056 would be my first choice in warmer conditions.
