First beer mashed in my 12 gallon cooler mash-tun. Also my first experience brewing with Canada Malting 2-row.
Willamette addition at 30 minutes is a last second change from Centenial and Willamette in attempt to break up the Centenial influence and allow the Amarillo at 10 min to come through.

22 HCU (~12 SRM)
Bitterness: 81 IBU
OG: 1.061 FG: 1.012
Alcohol: 6.3% v/v (4.9% w/w)
Water: Naperville tap water.
Grain: 11 lb. American 2-row
.25 lb. American crystal 120L
1 lb. American crystal 60L
Mash: 65% efficiency
Plan on mashing around 150F. Single infusion batch sparge. 65% efficiency was disapointing.
Boil: 90 minutes SG 1.043 7 gallons
4 oz. Cane sugar
Longer boil so to maximize efficiency. My usual boils are 60 min.
Hops: 1.0 oz. Centennial (8.7% AA, 60 min.)
2.0 oz. Willamette (4.8% AA, 30 min.)
1 oz. Amarillo (7.2% AA, 10 min.)
2 oz. Centennial (8.7% AA, 2 min.)
Yeast: Nottingham ale.
Log: Plan on brewing this in late December. Kegged on 12/29/10.
Carbonation: 1/2 cup table sugar in keg.
