Grain: 12 lb. American 2-row
1 lb. 4 oz. American crystal 40L
1 lb. 2 oz. Dextrine malt (Cara-Pils)
8 oz. American chocolate
8 oz. American black patent
5 oz. Roasted barley
Mash: 80% efficiency
Second pitch batch parge of The looking glass mash start new new parge with 5.5 gal@ 1.010sg, heat to 170 add to mash for 90 min recirculating and heating to maintain 168 in cooler mash tun, 2oz nugget pellets in mash tun
Boil: 90 minutes SG 1.084 5.5 gallons
1 oz. bakers chocolate
4 oz. Brown sugar
1 oz dark baking chocolate,1/2 level tsp cayenne,2level tsp cinnamon at boil, 4 oz brown sugar at 60 min, 1oz irish moss at 75 min
Hops: 2 oz. Cascade (6% AA, 60 min.)
2 oz. Nugget (12% AA, 60 min.)
2 oz. Northern Brewer (8.5% AA, 45 min.)
3 oz. ammarillo (aroma)
Yeast: Wyeast irish ale, would have preferred London Ale III or Pacman if available
Log: 3 oz amarillo leaf dry hopped in primary,rack to secondary@10days,add 24 jd oak cubes in secondary, second rack in 17 days, need pump&coarse filtration for high solids high gravity like this, lost a lot of volume in the first rack even with hop bag.
Carbonation: corny keg
Tasting: first sip at second rack was filthy!! delicious. With some small mods this will be an epic winter ale
