The Barking Chicken

I wanted to try a IPA using munich and vienna malts instead of 2 row.

Type: All grain Size: 5.5 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 45 IBU
OG: 1.056 FG: 1.014
Alcohol: 5.4% v/v (4.2% w/w)
Water: none. city water
Grain: 2.07 lb. British pale
3.85 lb. American Vienna
4.44 lb. American Munich
1.18 lb. Dextrine malt (Cara-Pils)
1.18 lb. Flaked corn
0.59 lb. Rolled oats
1.18 lb. Flaked rice
Mash: 60% efficiency
145° rest / 30 mins/3 gallons 160° strike water. Meanwhile, slowly bring to boil in separate pan 1.5 gallons water,corn,and 1# of grain.
Add corn mix to mash plus 2 gallons 160° water and hold at 154° for 90 minutes.Sparge with 2.5 gallons 180° water for 30 minutes.Collect 7+ gallons.
Boil: 75 minutes SG 1.044 7 gallons
Irish moss at 10 minutes.
Hops: 1.59 oz. Cascade (7.8% AA, 60 min.)
2.0 oz. Cascade (aroma)
1.5 oz. Centennial (aroma)
Yeast: Used safbrew T-58, rehydrated in 1 qt. of cooled wort(70°) for 1 hour.
Log: Ferment @ 70° 7 days glass carboy, rack to 2nd w/ gelatin another 10-14 days.
2nd hop addition was in secondary. Used Amarillo 8.9% AA in a french press and added to carboy
Carbonation: 2.0 vol. force carb @ 20 psi. 5 days
Tasting: Haven't yet. Brewed 12-02-10
