Marla's Peach Wheat

I was looking to make a Mild Wheat with some fruit character, makes me happy and my little sister will love it when she comes to town..... maybe a beer fiend in the making.

4 HCU (~4 SRM)
Bitterness: 13 IBU
OG: 1.065 FG: 1.018
Alcohol: 6.1% v/v (4.8% w/w)
Grain: 1.5 lb. Belgian pale
.75 lb. Flaked oats
Mash: 45% efficiency
148 def F 1 hr, simple partial mash in a bag
Boil: 60 minutes SG 1.109 3 gallons
6 lb. Wheat extract
1.5 lb. Cane sugar
Hops: 1.25 oz. Cascade (4.5% AA, 60 min.)
Yeast: US 05, no starter
Log: brewed Sat Oct 6, 2010 avg temp at 68 deg. F slowly warm after 5 days. added 1 lb frozen peaches after primary died down Gravity is 1.018. ferment out until level.
Tasting: at end of primary, mild Wheat Flavor, slight fruitiness from the yeast... basic mild wheat. needed character, Peaches were chosen.
