Bitterness: 17 IBU
OG: 1.062 FG: 1.011
Alcohol: 6.6% v/v (5.2% w/w)
Water: Mississippi tap.
1/2 gal bottled to top off fermentor
Grain: 1 lb. 0 oz. American crystal 60L
2 oz. Roasted barley
Steep: add grains to 1 ga. cold water & bring temp to 150°F.
Hold @ 150°F for 30 min. Sparge w/ 170°F.
Boil: 60 minutes SG 1.062 5 gallons
3 lb. 3 oz. Amber malt extract
3 lb. Light dry malt extract
1 lb. Honey
Boil light AME the full 60 min.
Add Amber LME & honey last 10 min.
Hops: .75 oz. Kent Goldings (5% AA, 60 min.)
.25 oz. Fuggles (4.75% AA, 30 min.)
.25 oz. Kent Goldings (5% AA, 30 min.)
.5 oz. Fuggles (aroma)
Yeast: WLP002 English Ale.
1 liter starter made 24 hours before pitching
Log: Ferment @ 72°F. for 1 week.
Transfer to carboy for 2 weeks @ 70°F.
Bottle and condition at least 2 weeks.
Carbonation: 1 cup corn sugar
