A simple recipe to try cloning Old Speckled Hen.

Grain: 17 lb. 0 oz. American 2-row
2 lb. 0 oz. American Vienna
1 lb. 4 oz. American crystal 10L
0 lb. 12 oz. Dextrine malt (Cara-Pils)
0 lb. .5 oz. British black patent
Mash: 62% efficiency
Single infusion. 5 gallons 175°-mash at 151° for 2 hours. Mash out 170° water (1.5 gallons) 20 minutes.Sparge 45 minutes w/ 8 gallons 170° for 45 minutes.preboil gravity was 1.046.
Boil: 90 minutes SG 1.044 12.5 gallons
2 lb. 0 oz. Corn sugar
2# corn sugar added to boil.Irish moss at 10 minutes.
Hops: 1.5 oz. Centennial (10.5% AA, 60 min.)
1.5 oz. Kent Goldings (5% AA, 45 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Wyeast 1275 Thames smack pack added to 2 quarts of wort for 1 hour prior to pitch.
Log: ferment at 68° for 7 days, rack to secondary for 7 days w/ gelatin.
Carbonation: 2 qts gyle saved to krausen 1 keg (strain before to add 1.5 qts to keg), force carb other 20 psi.
