Harvest Moon

A once in a lifetime beer, brewed the evening of Autumnal Equinox and the full "Harvest Moon." Prost!

Type: All grain Size: 5.5 gallons
Color:
36 HCU (~17 SRM)
Bitterness: 14 IBU
OG: 1.048 FG: 1.010
Alcohol: 4.9% v/v (3.8% w/w)
Water: 1 TBS 5.2 Mash Stabilizer, 1 tsp gypsum
Grain: 4 lb. Wheat malt
2 lb. German Vienna
2 lb. German Munich
8 oz. Belgian CaraMunich
6 oz. American chocolate
Mash: 80% efficiency
60 min at 153°F, mash out at 160°F for 10 min, continuous sparge with 170°F water to collect 7 gallons in brewpot.
Boil: 60 minutes SG 1.037 7.0 gallons
Hops: .5 oz. Hallertauer Tradition (5.8% AA, 60 min.)
.25 oz. Hallertauer Tradition (5.8% AA, 15 min.)
.25 oz. Hallertauer Tradition (aroma)
Yeast: White Labs 300 (Hefeweizen)
Log: Primary at 70°F for 7-10 days. Secondary at 70°F for 14 days.
Carbonation: 3.8 volumes Keg: 22.6 psi @ 35°F
Keg and force carbonate.
