Crazy Horse - Oak Aged Double IPA

A big, bold double IPA made with Chinook and Warrior hops then aged on toasted oak.

18 HCU (~11 SRM)
Bitterness: 85 IBU
OG: 1.086 FG: 1.012
Alcohol: 9.6% v/v (7.5% w/w)
Water: 1 tsp gypsum and 1 TBS 5.2 stabilizer in mash
Grain: 15 lb. American 2-row
2 lb. American crystal 40L
6 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
153F for 30 minutes. Decoction to reach 170F for additional 10. Sparge with 170F to reach 7.5 gal in brewpot.
Boil: 60 minutes SG 1.069 7.5 gallons
1 lb. Wildflower Honey
1 tsp Irish Moss last 15 minutes
Hops: 1 oz. Chinook (11.5% AA, 60 min.)
.5 oz. Chinook (11.5% AA, 45 min.)
1 oz. Warrior (15.8% AA, 30 min.)
.5 oz. Chinook (11.5% AA, 15 min.)
1 oz. Warrior (aroma)
Yeast: WLP001 from a previous batch.
Log: Primary at 70F for 5-10 days. Secondary at 70F for 2 weeks with 2 oz oak chips (steamed for sanitization).
Carbonation: 1.8 volumes Keg: 3.9 psi @ 38°F
