Cassis Tower

This is a fruit beer created to be enjoyed over the summer. Most of the ingredients --jaggery, Vanguard hops, and the specialty grains -- help create a smooth, full bodied ale.

Type: Extract w/grain Size: 5.5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 33 IBU
OG: 1.052 FG: 1.010
Alcohol: 5.4% v/v (4.2% w/w)
Water: Use well water from our spring.
Grain: 1 lb. Fawcett Golden Promise
1 lb. Briess Torrified Wheat
1 lb. Gambrinus Honey Malt
Steep: Grind grains by gently cracking husks. Place in a soaking bag and hang in 2.5 gallons cool water. Turn on heat, bring water temp to 170F. Remove grain bag and let drain for 60 - 90 seconds. Do not squeeze grain bag.
Boil: 60 minutes SG 1.095 3 gallons
5 lb. Wheat extract
1 lb. Jaggery
At onset of boil add hops as scheduled. 30 minutes into boil add 8 oz. malt dextrine. Final 5 minutes add Irish moss.
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
1 oz. Vanguard (6% AA, 30 min.)
.5 oz. Vanguard (6% AA, 15 min.)
.5 oz. Vanguard (aroma)
Yeast: Ringwood Ale Yeast - Wyeast 1187
Log: Ferment in primary for 7 - 10 days. Rack into secondary fermentor and add 4 lbs of fresh blackberries.
Carbonation: Prime with 7/8 cup of blackberry blossom honey
