Hitchfest 2010 Simaraleon

Barry & I are brewing this batch on

Barry's R.I.M.S. Brewery for Zach's oldest daughter Brittany's wedding

on July 31/2010 to her fiancé Mike Hess. Brewed on 6/19/2010.

Beer: Hitchfest 2010 Simaraleon Style: American Pale Ale
Type: All grain Size: 18 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 40 IBU
OG: 1.063 FG: 1.018
Alcohol: 5.8% v/v (4.6% w/w)
Water: All water is RO; 1 Tbsp Gypsum
Grain: 30 lb. Belgian pale
1 lb. Wheat malt
3 lb. German Munich
.75 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
Mash: 69% efficiency
Mash in with 170°F hot liquor to rest at

151°F-153°F for 1 hour or until conversion on RIMS system. Raise to

170°F to mash out.
Boil: 80 minutes SG 1.076 15 gallons
5 lb. Light dry malt extract
1 tablespoon Irish Moss and 1 tsp. AllFloc last 15 min. of

boil.
Hops: 2 oz. Cascade (7.2% AA, 60 min.)
2 oz. Northern Brewer (8.1% AA, 60 min.)
1 oz. Cascade (7.2% AA, 45 min.)
1 oz. Cascade (7.2% AA, 30 min.)
2 oz. Cascade (7.4% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast #1968 London Special Ale, very

flocculant, must rouse occaisionally in 1° & 2° fermenters.
Log: Barry is fermenting one carboy in H2O bath w/t-shirt at 68° at his house, and I'm fermenting 2 carboys in temp controlled fridge at
68°F at my house (not enough room in my ferm fridge for 3 carboys!). Activity started in my Carboy #1 within 5 hours of pitching yeast, with positive pressure in #2. By next morn, both in full ferm, #1 really rolling. I think this carboy got the largest yeast charge. Barry reports that his is just starting to kick off this morning.
Carbonation: Will force-carbonate in three 5-gal.
