Grain: 3kg Pale Ale Malt
2kg Wheat malt
Mash: 75% efficiency
Protein Rest 50C for 15 min
Saccrification 67C for 60 min
Mash Out 75C 10 min
Boil: 90 minutes SG 1.038 30.7 liters
Hops: 30g Willamette (5% AA, 60 min.)
15g Hallertauer (aroma)
Yeast: Fermentis US-05
Ferment at 17-18 C for 1 week

"On brewday or before cut the flesh from one 5-6 KG watermelon. This should yield approx 3-4 KG of fruit. Put the chunks / juice in ziplock bags and freeze.
Thaw and add to the primary fermenter after about 1 week, it should be towards the tail end of the fermentation. This will restart the fermentation, like crazy. Now this is important dont let anybody who will potentially be drinking the beer see inside the fermenter, because they will never drink it if you do. It will be a yeasty watermelon mess, but damn it will smell good.

Before kegging/bottling pull out the chunks of watermelon. I used a slotted spoon, this made transferring much easier, but it was still a pain in ass due to the seeds.

What you will have when you are done is a great summer beer. Its not going to taste like a watermelon jolly rancher, it is going to be a nice wheat beer with great watermelon aroma and a strong hint of watermelon flavor. Your guy friends will claim that its a chick beer, however they will quietly sneak back to your kegerator for a second or ever third glass. As for the ladies, yes, they too will love it."

added 3.400 KG of watelmelon cubes to fermenter after 5 days. removed after another 5 days.

OG = 1046 but than i added the watermelon / FG = 1006
so i guess ABV as around 5.5%
Carbonation: 2.5 volumes Corn Sugar: 132g for 20 liters @ 20°C
Carbonation Volumes: 2.5
Tasting: tasted two weeks after bottling. no watermelon aroma or flavor. a bit of red tint to the color. no big success here.
I should have tasted the wotermelon i used, it could have been a very watery tastless one.

Tasted it again four week after botteling. Very nice American Wheat. nice coloer with a reddish tint. no real watermelon aroma or flavor, but very nice beer altoghether. i may try this again. could you more carbonation.
