West Coast IPA 3

This is the third time on a West Coast sytle IPA. Variations from my original Wild West IPA. This is a bit stronger on hops and malt. More Cascade this time.

Beer: West Coast IPA 3 Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 70 IBU
OG: 1.074 FG: 1.014
Alcohol: 7.7% v/v (6.0% w/w)
Water: Whirloc tablet for 15 min in the boil. Otherwise, northern CA tap water.
Grain: 1 lb. 8 oz. American 2-row
8 oz. American crystal 40L
4 oz. Dextrine malt (Cara-Pils)
4 oz. Raw wheat
Steep: Steep at 155 for 40 minutes with heat off and pot insulated.
Boil: 60 minutes SG 1.123 3 gallons
9 lb. Light malt extract
Hops: 1 oz. Summit (15.9% AA, 60 min.)
1 oz. Cascade (5.9% AA, 30 min.)
1 oz. Simcoe (12.2% AA, 30 min.)
1 oz. Amarillo (9.1% AA, 15 min.)
1 oz. Cascade (5.9% AA, 5 min.)
1 oz. Cascade (aroma)
Yeast: White labs Dry English Ale (the shop was out of California Ale)
Log: Brewed June 6, 2010, next morning had violent fermentation. Used a blow off tube instead of airloc. It would have blown an airloc through the cieling.
Had warm weather on June 11-13 (temp inside up to 80).
Secondary on June 13, 2010 and smelling wonderful.
Kegged on July 10, 2010. FG 1.014.
