Stone Clone

This is my first attempt at cloning a commercial beer.

Brewer: Bryan Dore Email: -
Beer: Stone Clone Style: India Pale Ale
Type: Partial mash Size: 6 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 55 IBU
OG: 1.065 FG: 1.010
Alcohol: 7.1% v/v (5.6% w/w)
Water: Tap water for the boil; no adjustments. Used two gallons of icy spring water in the primary fermenter. Used cold tap water to top it off.
Grain: 3 lb. American 2-row
1 lb. American crystal 20L
Mash: 65% efficiency
Heated one gallon water to 168°F. Added grains and stabilized at 150°F. Mashed for one hour. Sparged with two gallons of water at 170°F. Added six quarts hot water.
Boil: 60 minutes SG 1.098 4 gallons
4 lb. Light malt extract
4 lb. Amber malt extract
Added Irish moss for last fifteen minutes.
Hops: 1.5 oz. Centennial (11.5% AA, 60 min.)
.5 oz. Chinook (11.4% AA, 60 min.)
.5 oz. Centennial (11.5% AA, 15 min.)
.5 oz. Chinook (11.4% AA, 15 min.)
2 oz. Centennial (aroma)
Yeast: White Labs California, pitched at 70°F.
Log: Racked to secondary after one week. Dry hopped; used muslin bag. Since bag wasn't wrapped very well, I "wrung" out the bag upon removal, causing hop residue.
Tasting: Fruitier than the real thing. Great hop aroma. Poor clarity, due to wringing out hop bag.
