60° for 120 min
70° for 15 min
mash out 78° for 15 min
long mashing time due to low wheat water adsorption and conversion rate
this led also to low efficiency
Boil: 60 minutes SG 1.050 100 liters
1kg Corn sugar
Hops: 40g Hallertauer Hersbrucker (5% AA, 60 min.)
80g Target (13% AA, 60 min.)
40g Hallertauer Hersbrucker (aroma)
Yeast: fermentis WB06
Log: high fermentation temperatures (up to 26°C); fermentation completed after 36 hours
