I brewed this weizen to celebrate my daughter's graduation. It should be nice and malty and fruity.

Bitterness: 18 IBU
OG: 1.067 FG: 1.008
Alcohol: 7.6% v/v (5.9% w/w)
Grain: 5 lb. 2-Row
5 lb. Wheat malt
1 lb. German Munich
1 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
I did a single step infusion mash at 152 degrees F.


Boil: 60 minutes SG 1.056 6 gallons
Hops: 1 oz. Willamette (4.5% AA, 60 min.)
.5 oz. Cascade (4.5% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast: Smack pack of wyeast #3068, weihenstephan wheat
Log: brewed 5/30/10

fermented at 69 degrees for 10 days
Carbonation: forced CO2 for medium-high carbonation.
