Patriotic Sum'Bitch Super Premium American Lager

A pre-Prohibition pilsener, made on Memorial Day weekend with all American ingredients.

Bitterness: 40 IBU
OG: 1.061 FG: 1.012
Alcohol: 6.4% v/v (5.0% w/w)
Water: Soft water, no treatment.
Grain: 9. lb. Rahr 2-row pale
1 lb. Briess Carapils
1 lb. Flaked maize (corn)
0.5 lb. Wheat malt
Mash: 88% efficiency
Step mash. Protein rest at 131°F to 125°F for 15 minutes. Saccharification at 151°F to 147°F for two hours. Raise to 154°F for 15 minutes. Mashout at 168°F.
Boil: 70 minutes SG 1.058 6.4 gallons
Hops are added to sparge runoff: "first-wort hopping".
Irish moss with 15 minutes left in boil.
Hops: 85g Liberty pellets (4.5% AA, 70 min.)
Yeast: Y020 Saflager W-34/70 A 2-liter yeast starter was made, after rehydrating the yeast. The commercial copy says: "This famous yeast strain from Weihenstephan in Germany is used worldwide and has become the most popular strain for lager brewing. Clean and malty, suitable for a wide range of lager styles. Sedimentation: high. Final gravity: medium. Optimum temp: 48°-59° F"
Log: Yeast starter; started on May 22, 2009
Brew day: May 24, 2009. Pitching temperature: 78°F.
Primary fermentation temperature: 53°F
Siphoned on: April 6, 2009 Lagering temperature 45°F
Bottled: August 2, 2009
Carbonation: 2.5 volumes Cane Sugar: 100g for 6 gallons @ 43°F
Batch primed. The sugar was boiled and cooled before being added to the batch. The batch was stirred to mix, with minimum aeration.
Tasting: Nicely bitter, medium body, light color. An excellent beer for a hot Florida day.
