67 HCU (~27 SRM)
Bitterness: 31 IBU
OG: 1.056 FG: 1.010
Alcohol: 5.9% v/v (4.6% w/w)
Water: High quality Rocky Mountain tap water fresh from our faucet.
Grain: 12 oz. American chocolate
Steep: 30-45 minute steeping time prior to adding extract and hops.
Boil: 30 minutes SG 1.121 2.3 gallons
3 lb. Light dry malt extract
2 lb. Amber dry malt extract
1 lb. Cane sugar
After steeping grains, remove grain bag, add extract and hops, boil for 30 minutes.
Hops: 2 oz. Nugget (12.2% AA, 30 min.)
Yeast: Irish ale yeast 1082? Left over from previous irish red ale. American Ale yeast would also work well.
Log: Special note on pecan flavor: We toasted approx 1.5 cups of whole pecans, chopped them up after letting them cool, placed them in a pint sized Mason jar and filled with high quality Vodka. After approx two weeks the pecans should be strained out and the vodka/pecan liquor added to secondary.
